Dark Days on vacation

(c)2007 AEC ** ALL rights reservedSuffice to say that we had such a relaxing time on our vacation that it’s taking us an inordinately long time to get back in the swing of things. We’ve been home nearly 2 weeks now, and I am finally getting my head out of the clouds long enough to tell you about all the gorgeous food we ate.

Our 10 days away — in a little cottage in the foothills above Napa Valley — were incredibly relaxing. We brought along two coolers full of food from the farmers market (our landlord eyed the back of our car and quipped, “You know, we do have grocery stores here…”) and we spent nearly every day sitting by the fire, catching up on our reading, and cooking amazing food.

The day we drove up, we bought a pair of enormous Dungeness crabs from Shogun fish on their last market day of the season. The first night in our little cottage, Cameron picked the crabs and we sauteed the meat in Spring Hill Farm butter along with some zest from our backyard lemons and a few slices of green onions. Served over Eduardo’s linguine, with a salad and a split of Schramsberg sparkling wine, it was the perfect settling-in meal.

Of course, there was plenty of leftover crab meat! The next day, we turned part of it into crab omelettes for brunch, then mixed the rest into a sumptuous batch of fondue mac-and-cheese. Monday night, we whipped up a 100% local batch of Jen’s chicken cacciatore with an heirloom chicken from Prather and some Far West Funghi chanterelles, served over Full Belly Farm polenta with a bottle of Calistoga Cellars Zinfandel.

Tuesday night was Christmas supper: Mini beef Wellingtons! Prather Ranch filet mignon wrapped in puff pastry with a slice of Fatted Calf foie gras and duxelles made from Far West cremini mushrooms, Spring Hill butter, and Straus cream. On the plate: A sauce of red-wine-infused demiglace (homemade from Prather bones) and a side of Iacopi green beans quick-braised with Fatted Calf pancetta. We drank a bottle of Cabernet from Mount Veeder Winery, just a few miles down the road from our cottage.

Wednesday night, we turned to our usual lazy-day standby: Pasta Bolognese with a big green salad. Thursday we took the night off from kitchen duty, and headed down the hill for a gorgeous sushi-fest at Go Fish. By Friday, we were ready to cook again: We pulled the last of our homemade spiral sausage out of the freezer and served it along with cauliflower soup made from farmers market veggies and a mixture of orphan pieces from the local cheese plate we’d been nibbling all week.

Saturday night Cameron made an improvised braise of Prather beef cheeks, with homemade beef stock, home-canned tomatoes, and herbs from the garden. Served with more Full Belly polenta and some Ella Bella broccoli rabe, it was the perfect supper for the chilliest night of our trip.

Sunday night, we began prepping our traditional New Year’s cassoulet. While the stovetop was occupied simmering Rancho Gordo beans, searing Toulouse sausages, and cooking off Fatted Calf duck confit, we used the oven to roast a most gorgeous Range Brothers pork rib roast. An unorthodox recipe for potato gratin — started on the stovetop and finished in the oven while the roast rested — turned out beautifully… a perfect showcase for Little’s potatoes, Bellwether Farms cheese, and Clover dairy. We usually roast our Brussels sprouts, but because our baby oven couldn’t accommodate a roast and a side dish, we tried a new-to-us method: Sauteeing the shredded sprouts in rendered pancetta fat, and adding the crisped pork back to the finished dish at the end. (We loved it so much, we’re having it again tonight.)

Monday night — New Year’s eve — meant it was finally time to break into the cassoulet that had been tempting us with its luscious smells for the last 24 hours. A rough-but-tasty bottle of Pinot Noir and a big salad were all we needed to round out its delicious pork-infused goodness.

Packing the next morning was almost impossibly hard; our little kitchen had served us so well for our 10 days away! Unlike most rental houses, this one was well stocked with high-end cookware and thoughtful staples (organic eggs and Bouchon pastries awaited us our first morning). But the ultimate luxury was having the time to putter in the kitchen all day, every day. The space was cozy, and the equipment a bit spare, but it was such a treat to forget about the office, the phone, and all of our usual distractions for a few days and cook together.

We planned all along to keep up with the Dark Days challenge while we were gone, but looking back over our photos, we were surprised at just how well we’d done. With the exception of cocktails, a few lunches out, and our one in-town dinner, everything we ate and drank during our trip came from local sources. Getting to the 90% local, five-nights-a-week mark has become pretty achievable for us on a regular basis. It’s comforting to know we could get to 100% local — given unlimited time to plan, to shop, to cook — even if it’s not something we’re able to do in the workaday world.

Now, in theory, the Dark Days challenge wrapped up at the end of last year, with an optional extension into 2008. We’re having such a ball, we’ve decided to continue with the challenge, along with more than 20 other participants. Because our hostess, Laura, is in the midst of moving her house (and her chickens!), official wrap-ups will taper off to every two weeks.

Because it’s a new year, we’re going to make some changes to our own ground rules, too. Here’s our revised game-plan:

  1. We will continue to cook locally as often as we can, with a baseline of two dinners per week made from 90% local ingredients.
  2. We will write about at least two meals a week made with as many local ingredients as we can source. our locavore adventures regularly, but we’re going to dispense with the litany of meals and sources, as it’s getting rather repetitious and a bit boring for non-locavore readers. We WILL talk about new pantry items, new farmers we’ve discovered, and recipes for in-season items within our foodshed.
  3. Local for us will be a 100-mile radius for produce and a 200-mile radius for protein. We will try to keep our protein within a 50- to 100-mile radius at least twice a week. Strong preference will be given to items purchased directly from farmers at market rather than retail. Our protein will include pastured eggs, poultry, and pork, as well as grass-fed beef. When grass-fed is not available or not appropriate, we will use 100% humanely raised, pastured beef. (I find grass-fed beef too gamey in grilled or stir-fried preparations, but for braises and stews, it’s our new default.)
  4. We’re making the usual ‘Marco Polo’ exemptions for seasonings. We’re also making exceptions for flour, dried pasta, white rice, and polenta — we have no local sources of these ingredients, and man does not live by potatoes and bread alone. We will try to source baking ingredients locally, but I don’t expect to find much beyond nuts, and I won’t go through the holidays without baking. (We’ve found local sources for all of our grains.)
  5. We’ll try to limit processed and prepared foods to those produced within a 50-mile radius. We’ll try to determine how much local ingredient sourcing they’re doing, and talk about it in our posts.
  6. We’ll continue with the challenge through the end of the year, and then re-evaluate on New Year’s Day along with other participants. March.

Dark Days fudges a bit

(c)2007 AEC ** ALL rights reservedGetting the house — and the fridge — ready for our 10-day Christmas absence was an enormous pain in the ass. Truthfully, I enjoy the puzzle of combining fresh food and freezer fodder to make reasonably coherent meals, but sometimes this happens at the expense of our 90%-local Dark Days Challenge goal.

A case in point: We needed to use up tortillas (local), beans (ditto) and salsa (yep), plus an assortment of cheeses (likewise) — a natural set of ingredients for Budín Azteca, a.k.a. tortilla pie. So we defrosted the last of the local Thanksgiving turkey… and a decidedly non-local batch of mole sauce. We could say that the chiles qualify as seasonings and the chocolate’s a baking supply — both of which are exempt from the challenge. But given that we made and froze this sauce early last spring, long before even our first stab at locavorism, that seems a bit far-fetched.

Our second attempt was less of a stretch. With a half-jar of home-canned tomatoes, a few strips of Fatted Calf pancetta, half a ball of Belfiore mozzarella, and a handful of Far West mushrooms, we had all the makings of a couple of pizzas. We’ll overlook that the frozen pizza dough was made months ago with non-local flour (it’s still an exemption, after all, even if we have found some local sources for grains). Add a salad of Star Route Farms romaine, radicchio, and radishes, and we could call this our first true 90% meal of the week.

Hitting the mark without a single cheat, Tuesday night’s steak dinner featured Prather Ranch ribeye, an assortment of stray Little’s potatoes mashed with Straus cream and Clover butter, and another big salad, this one dressed with Point Reyes Blue and Bariani olive oil. Yum. Friday’s pasta night was another clean sweep: Our usual Bolognese sauce over Eduardo’s, a carrot-and-radish-topped salad, and garlic toast made from the heels of our Acme pain de mie loaf.

All in all, not a bad week of local eating, given everything else that we had going on.

It’s been a while since we’ve added any new local products to our pantry, but we discovered not just one variety but a whole assortment of dried chiles at the Tierra Vegetables stand at the Ferry Plaza market. Maybe, just maybe, the next time we pop a package of mole out of the freezer, we won’t be fudging at all.

Budín Azteca
1 to 2 cups shredded chicken or turkey
1/2 to 1 cup prepared salsa
6 to 8 corn tortillas
2 cups mashed black or pinto beans
2 cups mole (recipe follows)
1/2 cup chicken stock, plus more as needed
2 cups shredded melting cheese, such as Jack or mozzarella
sour cream, sliced radishes, and cilantro for garnish

Preheat oven to 350°F.

In a saucepan, warm the beans over medium-low heat, thinning with chicken stock or water to a spreadable consistency.

In a separate pan, warm the meat with the salsa.

In a third pan, heat the molé, thinning with 1/2 cup or more of chicken stock, to a tomato-sauce consistency.

Heat the tortillas in a skillet or over an open flame. Cut each tortilla into quarters and keep warm, wrapped in a clean dishtowel until ready to use.

Set aside 3/4 cup of the mole sauce for later use. Spread a spoonful of the remaining thinned sauce on the bottom of a 9×9 pan. Layer 6 to 8 tortilla quarters on top of the sauce, followed by 1/3 of the beans, 1/3 of the meat, a quarter of the cheese, and another small drizzle of the sauce. Repeat layering until all of the beans and meat have been used. Top the stack with the reserved 3/4 cup of sauce and the last quarter of cheese.

Bake, uncovered, 30 to 45 minutes, or until the sauce is bubbly and the casserole is warmed through to the center. If the cheese browns before the center of the pie is heated, cover with foil to prevent overbrowning. (Do not cover before this stage, or you will end up with cheese stuck to the foil.)

Let the casserole sit 5 minutes before cutting. Serve with a green salad on the side, and your choice of garnishes.

Mole de la Suegra
– adapted from Big Small Plates

2oz dried chiles negros
2oz dried chiles anchos
1/4 cup sesame seeds
1T whole black peppercorns
6 whole cloves
5 to 6 T lard or oil
2 slices french bread
1 large tomato, halved
1 large onion, cut into 4 thick slices
1 large clove garlic
2T salt
4 cups chicken broth
1 disk Mexican chocolate, coarsely chopped

Stem and seed the chiles, reserving the seeds in a small bowl, then gently toast the chiles in a skillet over medium heat just until soft; a couple of wisps of smoke are okay, but do not let them burn or your sauce will be bitter. Cover the toasted chiles with warm water and set aside.

Over high heat, toast the chile seeds lightly, continuously shaking the pan for 30 to 60 seconds. Return the seeds to their bowl. Toast the sesame seeds until lightly golden. Place them in the bowl with the chile seeds and let cool to room temperature. When sesame and chile seeds have cooled, grind them together with the cloves and peppercorns in a coffee grinder.

Put a large bowl next to the stove. In the skillet over medium heat, heat 2T of the lard until it shimmers. When fully heated, fry the bread until golden on both sides. Place the fried bread in the bowl. If needed, add another tablespoon of lard to the pan and caramelize the tomato, 5 to 7 minutes. When heated through and well browned, scoop the tomato into the bowl with the bread. Add more lard, if needed, and caramelize the onion slices and garlic, adding them to the bowl when well browned (7 to 10 minutes).
Drain the chiles, reserving the soaking liquid, and add them to the bowl. Add the ground seeds and spices and 2T salt to the bowl, and puree with a stick blender until smooth. (Alternately, you can blend in 2 to 3 batches in a conventional blender.) Add enough of the chile-soaking water to the puree to achieve a pourable consistency.

In a heavy saucepan over high heat, warm the rest of the lard. Before the fat smokes, carefully pour the sauce into the pan and fry for 1 to 2 minutes, stirring constantly. Reduce the heat and add the broth; simmer 10 minutes. Add the chocolate and simmer an additional 30 to 45 minutes. Use immediately, or cool to room temperature before storing.

Note: Unlike chicken stock or pasta sauce, we don’t freeze mole directly in quart-size bags. Like other oily sauces — curry pastes, pesto, etc. — we chill and freeze it in 1- and 2-cup plastic storage containers. When fully frozen, the sauce pops out of the containers and can be placed in vacuum-seal or Ziploc bags for longer storage. Be sure to remove the puck of sauce from the bag before thawing, to keep sauce from sticking to the inside of the bag.

Dark Days does lunch

OK, sure, we managed to hit our baseline — two dinners made from 90% local ingredients over the course of a week. But with the holidays and crazy work deadlines looming, there simply wasn’t time to show off.

Still, we ate pretty well. Our first Dark Days Challenge meal of the week revolved around a fabulous batch of carnitas tacos — Range Brothers pork tucked inside Rancho Gordo tortillas — with Happy Quail poblano chile rajas, Primavera salsa, and a side of Rancho Gordo heirloom beans. Our usual Friday night pasta-fest — Eduardo’s linguine and our homemade sauce — featured a shaved fennel and apple salad made from homegrown fennel, Apple Farm apples, Point Reyes Blue cheese, and Bariani olive oil. As quick weeknight meals go, they weren’t too shabby… even if we only managed two dinners from within our foodshed this week.

But, as I keep having to reminding myself, there are 14 other meals every week.

Pretty much every breakfast we eat meets our challenge criteria. Our eggs and butter are Clover Organic, the bread comes from Acme, the preserves are usually gifts from friends (who use local fruit) or bought from June Taylor. On the weekends, our Saturday market ritual involves a stop at Primavera, where the menu proudly displays the names of the farmers who grow their delectable ingredients. And on Sundays, we fancy up our weekday fare with Fatted Calf or Range Bros. bacon, or homemade breakfast sausage.

Lunch, though, is a mixed bag. When leftovers aren’t an option, things can be pretty grim. The area around my office is mercifully light on mega-chain fast food and rich in gourmet-ish choices, but none of them are particularly locavore-friendly. There’s a branch of Out the Door, the quick-service sibling of San Francisco’s famed Slanted Door restaurant, but the best they can do is “organic whenever possible”.

Twice a week, my options improve significantly.

On Tuesdays, I hop the streetcar down to the Ferry Building for the lunchtime farmers market. During the market, Prather Ranch sells hamburgers on Acme buns, and Donna’s sells tamales and “enchamales”, locally made with some local ingredients.

There’s an array of not-quite-there options inside the Ferry Building itself, mostly local but non-organic, or vice-versa. If you’re feeling particularly wealthy, I suppose you could lunch on Tomales Bay oysters and Bay Area microbrews at the Hog Island bar overlooking the bay, but that’s a wee bit rich for my everyday budget.

On Wednesday, I head to the decidedly un-chic Heart of the City farmers market at Civic Center. I pick up a few midweek provisions, but my real goal is a quarter of a spit-roasted Fulton Valley chicken and a side of basted potatoes from Roli Roti. All things considered, it’s probably my favorite locavore lunch option, and relatively cheap by comparison.

All in all, my best bet for Dark Days lunches is planned leftovers. But, given how unsuccessful we’ve been this last week at actually putting food on our table, it’s a good thing that other options exist.

Dark Days goes 7 for 7

I’m slightly embarrassed that I bemoaned the end of avocado season and the near-disappearance of local tomatillos, when any locavore worth her salt would just suck it up, file away those recipes for the winter, and learn to love what’s left.

I mean, hell, it’s not like we’re in some snowbound location where all we have to eat from October to May is bitter greens and root veggies. And it’s called Dark Days Challenge for a reason — if it were simple, what fun would that be? So, in the spirit of pushing our eating habits into new territory, we ate seven local dinners in a row.

That’s right, kids: Last week, Sunday to Saturday, we ate within our foodshed every single night. Some meals were a stretch, and we fell back on our exemptions and our “90% local” metric with a vengeance. But we were shocked and awed by the number of specialty ingredients that we could source from right in our back yard if we really looked hard enough.

Case in point: For our first meal, potstickers and a long-bean stir-fry, we were happily amazed to find gyoza wrappers made a few miles south of the house (although almost certainly from non-local flour) at our neighborhood Asian grocer. For the filling, we ground Range Bros. pork butt from the Prather boys. All of the various veggies — ginger, scallions, cabbage, and long beans — came straight from the farmers market. We hit our 90% target easily: everything except soy sauce and sesame oil was local.

Another night, we tackled a new recipe for bibimbap. Although it required imported gochujang — a fiery Korean condiment — for the topping, and both soy sauce and sesame oil for the marinade, everything else (meat, rice, veggies, eggs, sprouts, nashi, and even kimchi) hailed from within our 100-mile radius. Surprised we could cook not one but two authentic Asian dinners from 90%-local ingredients? I sure was.

Rounding out the week, there was a pot of chili with a skillet of sage cornbread, a pan of cheesy lasagne, a big batch of pot pie, and Friday night’s traditional linguine Bolognese — with salads on the side and either local wine or SF-brewed beer each night. We were a little stunned to discover that all of these meals fit our challenge ground rules; We even used local flour for the pot pie’s biscuit crust.

Our last local dinner (pictured above) was the most successful of all, in so many ways. We’re helping a friend recipe-test his upcoming cookbook, and one of the recipes he sent us involved a dish we’d probably never have made on our own. Without divulging too many details of this as-yet-unpublished masterpiece, I think I can say that it was totally worth the lunchtime schlep over to the Berkeley farmers market to get Full Belly Farms wheatberries for this dish, rather than opting for one of the substitutions the recipe allowed.

As an added bonus, this was a 100% local meal — perhaps our first? — using Marin Sun Farms beef, homemade chicken stock (from local chicken carcasses), farmers market veggies, Bariani olive oil, homegrown herbs, Anchor Steam beer, and a jar of those Mariquita tomatoes from our home-canned stash. Not a single exemption to be found beyond salt and pepper… Mmm, delicious.

Now, I’d love to share the recipe for that stunning beef dish, but alas I am sworn to secrecy until the book is published.(EDIT: Matthew, the book’s author, kindly corrected my oversight: A very similar recipe was published last spring as part of his Culinate column, Unexplained Bacon.) In the meantime, I can highly recommend our second-favorite meal of the week. This recipe makes enough to serve 8, so we froze half of the filling to use later in the winter. For a quick weeknight meal, all we’ll have to do is whip up a batch of cheddar biscuits, reheat the filling, and wait patiently by the oven.

Chicken Pot Pie with Cheddar Biscuit Crust
– adapted from Gourmet, November 2007

Filling:
1 onion, chopped
2 large carrots, medium (1/2-inch) dice
2 celery ribs, medium dice
1 large parsnip, peeled, cored and cut to medium dice
1 tsp chopped thyme
3 T chicken fat or olive oil
salt & pepper to taste
1/4 cup flour
3-1/2 cups chicken stock
1 cup shelled English peas
4 cups leftover chicken, medium dice

Crust:
2 cups flour (we used 1/2 all-purpose and 1/2 whole wheat)
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp black pepper
1 cup coarsely grated sharp Cheddar
1/4 cup coarsely grated Dry Jack (or Parmesan)
4T cold unsalted butter, cut into 1/2-inch pieces
2T leaf lard, well chilled and cut into 1/2 pieces
– (or substitute 2T more unsalted butter)
1 cup well-shaken buttermilk
1/4 cup cream, half-and-half, or milk

Sautee the vegetables and thyme in the chicken fat or olive oil over medium-low heat until soft but not browned; add salt & pepper to taste. Sprinkle the sauteed vegetables with flour and cook, stirring well, for 2 minutes or until the flour loses its powdery consistency. Stir in the stock, scraping up any browned bits. Add the peas and bring to a boil, then reduce heat to medium and simmer until thickened, about 5 minutes. Stir in the chicken, and adjust salt and pepper as needed.

The filling can be cooled and refrigerated (or frozen) at this point. Cook refrigerated filling within 24-48 hours; frozen filling will last 3 months if properly stored. If using immediately, lower heat, cover, and keep warm until topping is ready.

Place an oven rack in the middle of the oven, and preheat oven to 400°. If using previously made filling, reheat thoroughly over low heat before proceeding.

To make crust: Sift together all dry ingredients into a large bowl. Add the cheeses and toss to coat with flour mixture. Add butter and cut into the flour using a pastry blender or your fingers until dough resembles a coarse meal. Add the dairy products and stir just until dough comes together; do not overmix. Set aside.

Transfer the filling to two pie pans or a 13×9 casserole. Drop the biscuit dough in 8 large portions on top of the hot filling, leaving space for filling to bubble up, if possible. Bake for 35 minutes, or until biscuits are risen and golden brown. Let stand 5 to 10 minutes before serving.

Dark Days does leftovers

(c)2007 AEC ** ALL rights reservedThank goodness, we’re done with turkey. Blissfully, all of the bits and pieces made their way either into our bellies or the stock pot by early last week.

On Sunday night, we were so sick of overstuffed plates that we decided to graze. The platter pictured was our family supper: Fra’Mani salumi, Judy’s country crackers, Alfieri’s salted blanched almonds, and three cheeses: Gravenstein Gold, Matos St. George, and Midnight Moon. Every last bit was local, and all of it was delicious.

Of course, there’s no getting through Thanksgiving leftovers in our house without the obligatory platter of Enchiladas Suizas. This tangy south-of-the-border specialty is my favorite way to use up excess poultry, no matter the season. But my attempts to keep the dish 90% local highlighted one of the realities of the Dark Days challenge: It’s getting harder to eat as we like as the year wanes.

Unable to find tomatillos at the Ferry Plaza market, I hit up Rainbow Grocery… but theirs hailed from Mexico. I did turn up a few small specimens at the Berkeley farmers market, but they weren’t exactly plentiful. Next year, I’ll follow the lead of the Monkey Wrangler and put up tomatillos when they’re overflowing the market stalls.

But no matter the shopping conundrum, there are few things that make me happier than sitting with my clan around a table full of gorgeous Mexican comfort food. We rounded out the meal with a pan of sopa seca (Mexican rice) and a pot of heirloom beans. We even managed a small bowl of guacamole courtesy of our friend Tea, who gifted us with a trio of the season’s last avocados on her way out of town.

It’s becoming clear that locavore meals are going to require additional creativity in the coming weeks. (Is it cheating to call dried chiles a spice when you’re using them by the bagful to make enchilada sauce? Hmm…) Thankfully, we’ll be able to get our Lundberg rice and our Rancho Gordo tortillas and beans year-round. In the meantime, Rick Bayless assures us that his recipe’s just as good with canned red tomatoes as it is with fresh tomatillos; it might just be the sort of project worth a dip into our pantry stash.

Enchiladas Suizas
– adapted from Mexico One Plate at a Time

3 pounds tomatillos, husks removed, washed to remove sticky residue
– or substitute two 28-oz cans whole tomatoes, drained
2 serrano or jalapeño chiles, stemmed
2T pork fat, chicken fat, or oil
1 medium onion, chopped
2 cups chicken or turkey broth
1/2 cup sour cream, thinned with 2T cream or milk
3 cups shredded meat, such as leftover roast chicken or turkey
2/3 cup shredded melting cheese, such as Jack
12 corn tortillas
For garnish: sliced purple onions, cilantro springs, radish slices

Roast the tomatillos and chiles under the broiler until charred and soft on both sides. Transfer to a blender along with the pan juices and puree until no large pieces remain. (If using canned tomatoes, roast the chiles in a skillet, blend them with the drained tomatoes, and proceed.)

Heat the oven to 350°F.

In a Dutch oven, heat the pork fat over medium heat. Add the onion and saute until golden. Raise the heat a notch and add the puree; cook until thickened to the consistency of porridge, 10 to 15 minutes. Stir in the broth and season to taste with salt. Cover partially and simmer 15 minutes until the sauce is still slightly soupy. Keep warm until ready to use, thinning with more broth or water as needed to keep relatively loose.

Just before using, stir the thinned sour cream into the sauce. In a large bowl, combine the meat with about 1/2 cup of the sauce, or enough to coat it without making too wet. Season to taste.

Lay the tortillas out on two baking sheets, and brush lightly both sides with corn or vegetable oil (or more pork fat). Heat in the oven for about 3 minutes, until tortillas soften enough to roll without breaking. Remove from oven and keep warm, wrapped in a towel.

Spread 1 cup of the sauce on the bottom of a 13 x 9 pan. Roll up a portion of the chicken mixture in each tortilla, then arrange the filled enchiladas in the pan in a single layer. Cover with the remaining sauce, then top with the cheese. Bake until the dish is heated through, about 15 minutes. (Depending on your oven, you may need to cover the top to prevent overbrowning, or turn on the broiler at the end to give the cheese a golden crisp.)

Serve, 2 or 3 to a plate, garnished with onion slices, radishes, and/or cilantro sprigs.

Note: Leftovers are delicious, but because the tortillas lose their shape and consistency, it’s more like a casserole on the second day.

Dark Days talks turkey

“Ugh, not turkey again!”

I know, I know — you’re probably as sick of reading about turkey as I am of eating it right about now. But, alas, that’s one of the perils of being the hostess: A house full of family and a fridge full of food seriously cuts into your blogging time. But now they’re all on their way — the relatives to the airport, the leftovers to the freezer or compost bin — and I’ve got a moment to get caught up.

(And I promise if you stick with me to the end, there’s a treat.)

I’d been noticing the steady disappearance of some of our autumn staples from the farmers market — bye-bye avocados, so long green beans — but at least when it came to our Thanksgiving feast, nearly everything came from within a 100-mile radius of home. As I wrote out my shopping list, I realized that I didn’t have to eliminate many favorites, and it occurred to me that Thanksgiving may be one of the few times of the year that most Americans are eating seasonally. With the exception of the cranberries in the relish, the bowl of buttered corn niblets (which I zipped and froze a few months ago), and a bit of commercial flour, everything on our plates came fresh from the farm, ranch, or dairy just a few days before they were eaten.

Rather than list a page-long litany of producers and distances here, I decided to create a GoogleDocs spreadsheet. (Geek is the new black, they tell me.) I was so pleased that we inadvertently managed to do even better than usual for this one meal — our turkey was the only significant item that came from more than 100 miles away, although still very much inside our 200-mile protein foodshed. We also managed three other 99%-local meals this week: Lasagne served with beet and bleu cheese salad, pork chops with risotto and roasted cauliflower, and the ever-popular family tradition of a “(Not)-Spam and Eggs” holiday brunch.

But enough about that; let’s skip ahead to dessert.

Longtime readers may recall my earlier confession that neither Cameron nor I enjoy eating squash. Amusingly enough, this even extends to pumpkin pie… or at least it did until a few years ago. In deference to holidays guests — for whom Thanksgiving would not be complete without a slice of crusted Curcubita custard — I grabbed a handy recipe and whipped it up.

The recipe’s unique twist was the use of pumpkin puree, rather than solid-pack squash, a tricky thing to find outside of health food stores in those days. (It’s since become ubiquitous at Whole Foods and the like, so you shouldn’t have to hunt.) My guests raved about the pie with such genuine eye-rolling pleasure that I reluctantly tried a small sliver. And wouldn’t you know it: This pie, for some reason, had no trace of the abhorred squashiness, just a luscious, pumpkin-y goodness.

I suspect that there’s something about the solid-pack processing that makes pumpkin especially gag-worthy, and that choosing puree keeps the texture light and the flavor fresh. This year, we steamed our own Sugar Pie pumpkins from Mariquita Farm, pureed the flesh, and used it in place of the canned variety. If anything, the result was even better than usual — a pumpkin pie that even squash-haters can love.

Classic Pumpkin Pie

single-crust pie dough, chilled 1 hour
(I use Martha’s pate brisee, replacing half of the butter with home-rendered leaf lard)

1/2 cup granulated sugar
1/2 cup loosely packed brown sugar
1-1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. table salt
2 large eggs
4 large egg whites
1 pound pumpkin puree, or a 15 oz can (not solid pack)
1 cup cream
1 tsp vanilla extract

Position rack in lower third of oven, and preheat to 425° F.

In a large bowl, whisk sugar, brown sugar, cinnamon, nutmeg, and salt. Add eggs and egg whites, and whisk until well blended. Add pumpkin, whisking until smooth, then cream and vanilla; continue whisking until well combined.
On a lightly floured surface, roll out the dough into an 12-inch circle. Drape dough over rolling pin and fit into a 9-inch pie pan. Fold edges under and crimp. Place crust on a baking sheet.

Pour filling into crust, and bake for 10 minutes. Reduce oven temperature to 325° F, and continue to bake 55 to 75 minutes more, until center barely jiggles when the pan is tapped. If needed, cover the crust with foil strips or a shield to prevent over-browning.

Transfer pie to a wire rack, and cool. If not serving within the hour, loosely cover and refrigerate. (The crust suffers slightly, but the filling is even better when chilled.)

Dark Days goes shopping

Whole Foods In lieu of my usual meal recap, this week’s Dark Days post touches on the retail side of the equation. Despite our weekend in Los Angeles — which obviously kept us away from our beloved farmers market — and Cameron’s four-day business trip, I managed a number of 100-mile meals.

I’m sure you’re not particularly interested in the details thrown-together dinners of lazy mac & cheese, wintertime BLTs (with tomato bourbon jam as the “T”), mushroom omelets, or another rehash of Friday spaghetti night… but if you’re feeling left out, I’ve put a few photos on Flickr.

As good as we Bay Area locavores have it when it comes to restaurants and farmers markets, the notion of shopping with local products in mind seems to have gained very little traction in the retail world. Awareness of the benefits of locally grown and locally produced foods is spreading rather slowly beyond the rarefied world of the farmers-market set. It’s a difference that’s become more obvious as we seek out a wider variety of local ingredients as part of the Dark Days Challenge.

As I mentioned last month, Whole Foods recently made a much-publicized commitment to support local farms and purveyors. Rather than funneling all orders through a regional warehouse (where demands might be too great for any small farmer), Whole Foods produce managers can now literally buy produce off their loading docks from the people who raise it. Our local Whole Foods stores are following through on the consumer side, with little laminated signs touting the county of origin of most fruits and vegetables. Although the produce is far from exclusively local — a good deal still comes from the southern hemisphere — at least the labels allow consumers to make an educated choice.

Better yet, Whole Foods’ signage has been spreading beyond the boundaries of the produce section. Locally made cheeses are tagged at the service counter; locally produced pastas and sauces are flagged in the deli case, and locally sourced milk and butters get their due in the dairy aisle. PR spin or no, it’s an invaluable resource for those of us trying to reduce our food-footprint without turning into obsessive research nuts.

Even more amazingly, I noticed similar signs dotting the shelves at local supermarket chain Mollie Stone’s California Street location. Placed by an organization called Eat Local SF, these ‘shelf talkers’ are a little more generic than those at Whole Foods — they simply say “eat local”, with no point of origin listed. They’re also a bit less exclusive: Any prepared or processed food made within 250 miles is fair game, regardless of where the ingredients were sourced. (I also noticed a tag under olives bottled by a Southern California company with ‘Napa’ in its name, which were clearly labeled “Product of Spain”.)

But still, it’s baby steps in the right direction, and a stunning turnaround: The same chain didn’t even bother to respond last spring when I wrote them to explain why I was taking my business elsewhere (their employees couldn’t provide information on where their food was sourced). They may not be stocking their shelves any differently than in the past, but this one small bit of communication is making a visible impact on my customer satisfaction.

If a mainstream chain like Mollie Stone’s can improve, why not the little guys, the ones who painstakingly cultivate an aura of hippie chic? Our neighborhood market — a crunchy outpost called Good Life Grocery — features a decent produce section given the store’s diminutive size. But on a recent trip, we spied exactly one tag from a local farm, and not a single store-placed mention of distances or purveyors. The new-ish Canyon Market, a similar shop over the hill in Glen Park, is similarly bereft of locavore-friendly signage. Which begs the question: When your produce section includes just a few dozen items, would it really be a lot of extra work to let folks know where their food’s grown?

My current benchmark for locavore signage is Rainbow Grocery, a SOLE shopper’s paradise. Their produce bins sport detailed signs outlining each product’s farming methods, organic certification authority, farm name, and place of origin. Their bulk-foods section includes information about not just the origin and ownership of local products, but the milling location of dry goods like flours and meals (most of which are sent out of state for processing, alas). An entire shelf in their justly famed cheese case is devoted strictly to local products, and a detailed list on their site outlines distances, dairies, and varieties stocked. Even their vast herb, spice, and tea bins are stocked primarily with products harvested in Washington, Oregon, and the California coast.

In time, as customers demand it, perhaps we’ll see the locavore focus move more deeply into the mainstream, much like organic vegetables did over the last decade. In the meantime, we’ll direct our food dollars toward the farmers market, direct-supplier shops like Prather Ranch and Cowgirl Creamery, and the handful of retail outlets that support the choices we’re making.

Dark Days digs deeper

(c)2007 AEC ** ALL rights reservedBefore we dive into our week in local eating, I want to give a big shout out to our friend Jen over at Life Begins at 30 and Eat Local Challenge. Although she and her crew weren’t the first to come up with the idea of supporting local farmers, ranchers, and producers by eating within a given radius of one’s front door, they were the first to use the term “Locavore”, way back in 2005.

And now, no less a light than the Oxford University Press — editors of the New American Oxford Dictionary — have dubbed ‘locavore’ their word of the year for 2007, beating out such other contenders as ‘cougar’ (hint: not the big, spotted cat) and ‘colony collapse disorder’ for the big prize:

“Locavore” was coined two years ago by a group of four women in San Francisco who proposed that local residents should try to eat only food grown or produced within a 100-mile radius. Other regional movements have emerged since then, though some groups refer to themselves as “localvores” rather than “locavores.” However it’s spelled, it’s a word to watch.

And a movement to be reckoned with, y’all.

Dark Days entertains

(c)2007 AEC  ** ALL rights reservedI don’t know about you, but it seems lately like my life is exploding with insanity. It’s not just work, either; it’s home and dogs and life in general. It’s all rush-rush, crazy nonstop chaos… and it’s not even the holidays yet.

I knew things had gotten out of hand when I realized we hadn’t seen Paul & Sean — friends we saw nearly every week in the summertime — in more than a month. Worse yet, we hadn’t hosted a dinner party in so long that I couldn’t even remember who had come, or what we’d served. Clearly, something had to give.

Now, the last thing any frenzied soul needs in the midst of a swirling storm of busy-ness is the stress of planning a soirée. So we resolved to keep things simple: A small guest list, a casual menu, and an early start time so as not to keep folks up late. Ah, autumn entertaining… the very best kind, don’t you think?

Contorting our weekly menus into the Dark Days Challenge hasn’t been much of an effort, truth be told. But then, it’s hard to feel too smug when your whole meal plan involves soups, pastas, and meat-potatoes-veg plates with a green salad to start. Weekday dining is pretty fanfare-free at our house, and we like it like that.

But for company, it seemed like a nice touch to try at least one recipe that was just a little more haute than humble. For months, my recipe file has held a strange-sounding starter — Leek & Potato Soup with Melted Leeks in Ash — from rising star chef James Syhabout (of PlumpJack Cafe fame when the article debuted, now chef de cuisine at two-star Manresa… ooh-la-la!). Just as I’d hoped, the soup was special but not too fancy for the casual entree of braised lamb alongside bean-and-rice salad. And then there was that dreamy spice cake, frosted with icing made from local cream cheese and butter… a lovely kickoff to fall, if I do say so myself.

Thanks to the generosity of party guests Cookie and Cranky, we are now in possession of a bag each of whole-wheat flour and cornmeal, both grown by Full Belly Farm in Capay Valley. And — wonder of wonders — I found locally made dried pasta. Although neither organic nor sustainable in any discernible fashion, Eduardo’s Pasta Factory could hardly be more local: They’re just over the neighborhood line in Bayview, pratically visible from our back deck. Better yet, they make a pretty nice assortment of pasta types; this week we bought rotini, linguine, and penne, and there’s a few more shapes awaiting our next shopping trip. All in all, a good week for local carbs.
