		<description>The basic method which produces the chicken broth, is one that the late great Edna Lewis espoused.  I learned this method from her earlier cookbooks, and she also has it in her Gift of Southern Cooking.  In her earlier books, she uses celery in place of the onions.
I now use both: I think it produces a tastier broth.  And a very, very rich chicken broth at that.</description>
