		<description>Yum -- I love posole! I&#039;m guessing you&#039;ll get at least three, maybe 4 shoulder roasts out of a half a hog, especially if you count the picnic roast as &quot;shoulder&quot; (which a lot of butchers do. A *whole* pork shoulder is enormous!

I&#039;d use the picnic -- which has more connective tissue -- for the posole, and the Boston butt for porchetta or Miss Lewis&#039;s roast, if it were me. :)</description>
