		<description>I almost always use Yukons (and did when Anita and Cam were here). The starchier potatoes don&#039;t come out as melty and fabulous. The ultimately decadent version is made with German Butterballs.</description>

I think Laura used a large white variety along the same lines. I think either all-waxy or all-starchy would work, too -- it will just yield a different final texture.</description>
