Ack! I really didn't want to read about the Fresca ingredients--oh well, I don't drink that much of it....(I'm so good at denial:)

I like casseroles too, if they're made from good ingredients. Since I'm not big on traditional breakfasts, I'm always on the lookout for new ideas and the Creole Rice sounds like it would make a great breakfast dish. Maybe with the always useful poached or fried egg on top?

Take this recipe and insert chicken parts for the sausage, and you have my Mom's 'chicken & mushroom casserole'. There are few things better than rice that has been soaking in creamy goodness and baked. Mmmmmmm. Thanks for sharing - I'm going to make my mom's version now with sour cream, instead of the sodium bomb in a can. thanks!

Gosh, I was just thinking last night that it'd been a long time since I'd written anything that had gotten more than 1 or 2 comments. :)

Dagny: Gin and Fresca? Have you <a target="_blank" title="gin and coke?" href="http://marriedwithdinner.com/2006/12/22/dotw-la-orpez/" rel="nofollow">met my boss</a>?

Nicole: Gratin of bok choy is in a slightly different class than creole rice!

Jennifer J: Amen, sister. I'm glad to be home in the drizzle. It was really odd making comfort food when the temps in Vegas hovered in the 90s at dinnertime.

Jennifer H: So there's more than 5 embarassing foods in your personal pantry? hee hee

Muffin: Me, too. I made Martha's version of green-bean casserole one year, and it wasn't the same. I do like it, but not enough to go to all that effort. And although this starts out layered, it's somehow all integrated by the time it's done. Spooky, eh?

Mom: You're welcome! It was fun to help clean out the freezer.

Lauren: "Gave up" might be too strong a word; I still have occasional lapses. But I don't drink it like water anymore. Maybe 1 or 2 cans a week. Paul is brave; even I don't like that chicken and dumplings recipe!

Wow! You gave up Fresca! You are a better person than I.

I love casseroles! Unfortunately, Paul can't stand them so I never get to make them. I turn all my one vessel comfort food needs into soup these days.

Although - he will eat the chicken and dumplings that you made for your Dad. Hmmmm, it's chicken and dumpling weather here. I'll have to make it again!

This reminds me a bit of my attempt to re-create the green bean casserole with only good ingredients. It wasn't really worth it, though. I don't like green bean casserole, I guess.
I like the sound of your Trailer Park Paella! Again with the layered concoctions, Anita.

Ah, the canned corned beef hash - I love it! And I am also a fan of the cheesy Mexican combo plates as is my Mexican grandma, so I can't feel *too* guilty about that. :)

Thanks for playing along!

"... with the curtains drawn" -- I love it. Nothing like a piping hot casserole on a cold, rainy day!

There's no shame in digging casseroles! I routinely make them, and plan to make a gratin of bok choi tomorrow.

What? No Fresca? But it goes well with gin. And there's nothing wrong with a good casserole. Of course, this is spoken by a woman whose mother could do magic with some meat, veggies, and a can of Campbell's Cream of Mushroom.
