Those desserts are made fresh every single day completely from scratch, but by evening I can imagine they'd look tired. I believe they make only 1-3 dozen of each type per day, depending on popularity, so you can see why they'd be picked over by the evening. I know your trip isn't truly for "pleasure," but I hope you're finding a little relaxation anyway.
